FAQs

How do I know the eggs are cooked?

The whites should be opaque and firm with no clear, jelly-like patches. Cook longer if anyone eating is vulnerable and needs firm yolks.

Can I make the sauce ahead?

Yes. Cool and chill the sauce for up to 2 days, then reheat until bubbling before adding the eggs.

Can I add feta?

Crumble 50g over at the end โ€“ note it adds milk to the allergens.

Is it spicy?

Only mildly. Leave out the chilli flakes for a family-friendly version.
